THE PINEAPPLE
Did you know that if you try to make a gelatin dessert with fresh pineapple all you will have is a runny mess? Pineapple contains a group of enzymes called bromelain that will prevent the gelatin from setting.
Bromelain breaks down amino acid bonds in protein. This makes bromelain an excellent digestive aid. Bromelain also speeds wound healing and reduces inflammation. Inflammation is when a diseased or injured part of your body shows pain, redness, and swelling.
Pineapple also contains 100 percent of the Daily Value for manganese, a mineral needed for healthy skin and strong bones. Furthermore, pineapple is a sweet source of food that has a relatively low impact on your blood sugar, which is a really good thing.
If you examine a pineapple closely, you may think it is the king of the vegetable kingdom, with its large size, it large crown, and its thick spiky armor skin patterned with what may appear to be the faces and beaks of eagles... or could they be foxes? Down the center of the pineapple is a solid core. You can not sink your teeth into it. And, from the core radiates the actual fruit, to deliver you energy derived from the sun.
The pineapple was carefully crafted by God to let you know he is here with us. Such signs of God's abundance are everywhere around us. You just have to know how and where to look..

Friday, October 28, 2011 - Today I added some greenery into my breakfast by building a lifeboat with a leaf of romaine lettuce. I flooded it with yogurt (Trader Joe's Organic Plain Yogurt), and loaded it with passengers, some of whom were in a panic and going bananas, because one of their boat mates had fallen overboard. "Man overboard!" they cried out. The choppy waters were starting to drive the poor banana nuts. Those who remained calm were able to find a quick solution to the problem. They joined together tightly to form a life ring and jumped overboard to make the rescue.
This breakfast is mostly organic, thanks to Trader Joe. The Environmental Working Group put pineapples on its 2003 list of twelve foods least contaminated with pesticides. It's no wonder they are such a smart food.
How do we define the terms organic and natural? Knowledge is Power. Vote with your dollar purchases. Money talks. Buy pineapples and organically grown bananas and romaine. Buy local when possible.
